Position Overview

The Boning Room Butcher is a full-time, hands-on role responsible for the breakdown, boning and cutting of carcasses at AZ Enterprises Limited’s meat processing facility in Auckland. This role is focused on primary carcass processing in the boning room — distinct from the further-processing and smallgoods production work carried out elsewhere in the plant.

Key Responsibilities

  • Bone, cut and trim carcasses and primal cuts to specification, removing bone and excess fat as required
  • Prepare cuts of meat to correct size, shape and weight for packing, sale or further processing
  • Operate boning room equipment, knives and cutting tools safely and in line with standard operating procedures
  • Maintain correct yield, minimise wastage and identify quality defects during boning and cutting
  • Follow food safety, hygiene and traceability procedures in line with the facility’s registered RMP
  • Maintain sharp, well-maintained knives and tools, and follow safe knife-handling practices at all times
  • Sort, label and route boned product correctly for packing, storage or further processing
  • Keep the boning room, equipment and work areas clean and compliant with hygiene standards
  • Work as part of a team to meet daily production targets while maintaining quality and safety standards
  • Report equipment faults, quality issues or safety hazards to the shift supervisor promptly

Qualifications & Experience Required

Suited to candidates holding qualifications or relevant experience in one or more of the following fields:

  • Meat Processing or Butchery
  • Food Processing
  • Boning, Cutting or Carcass Preparation
  • General Manufacturing or Production (meat industry preferred)

In line with the ANZSCO Skill Level 3 benchmark, the minimum requirement is an NZQF Level 4 qualification, or a Certificate III including at least two years of on-the-job training in a boning room or meat processing environment. At least three years of relevant industry experience may substitute for the formal qualification.
