Soul Thai is seeking an experienced Chef to join our busy takeaway in Mount Eden. The successful applicant will be responsible for planning, preparing and cooking authentic Thai dishes while maintaining consistent food quality, portion control, presentation and food-safety standards.
This is a hands-on Chef position involving food preparation and cooking from raw and fresh ingredients, menu planning, stock control, quality monitoring and coordination of kitchen operations.
Key Responsibilities
Plan and develop Thai takeaway menus.
- Estimate food requirements, food costs and kitchen labour requirements.
- Order meat, seafood, vegetables, herbs, spices, sauces and other food supplies.
- Check the freshness, quality and quantity of ingredients received.
- Prepare and cook Thai curries, stir-fries, noodle dishes, rice dishes, soups, salads, appetisers, sauces, marinades and other menu items.
- Prepare ingredients by cleaning, cutting, slicing, seasoning, marinating and portioning food.
- Prepare Thai curry pastes, sauces, stocks, dressings and marinades according to established recipes.
- Use woks, grills, fryers, steamers, ovens, rice cookers and other commercial kitchen equipment.
- Monitor the taste, texture, appearance, temperature, portion size and overall quality of dishes throughout preparation and presentation.
- Ensure takeaway orders are prepared accurately and efficiently during busy service periods.
- Discuss food preparation, customer orders, dietary requirements and kitchen issues with the Manager and other staff.
- Demonstrate cooking techniques and advise kitchen staff on recipes, preparation methods, portion control and presentation.
- Supervise and coordinate kitchen assistants and food-preparation staff when required.
- Assist with selecting, training and guiding kitchen staff when required.
- Maintain standard recipes and consistent cooking and presentation procedures.
- Implement and enforce food-safety, hygiene, cleaning and sanitation requirements.
- Store, label, chill, freeze, thaw and preserve food safely.
- Monitor stock rotation and minimise food spoilage and wastage.
- Maintain a clean, organised and safe kitchen and food-storage area.
- Comply with the business’s Food Control Plan and workplace health and safety procedures.
Minimum Requirements
Applicants must have:
- A minimum of one to two years’ relevant work experience as a Chef in a commercial kitchen; or a relevant cookery or culinary qualification at NZQF Level 4 or higher.
- Demonstrated commercial experience preparing and cooking Thai cuisine.
- Knowledge of Thai ingredients, flavours, curry pastes, sauces and traditional cooking techniques.
- Experience preparing food from raw and fresh ingredients.
- The ability to plan menus, estimate food requirements and assist with food-cost control.
- Knowledge of commercial kitchen hygiene, food safety, allergen management and temperature-control requirements.
- The ability to maintain consistent quality and portion sizes in a fast-paced takeaway environment.
- Good communication, organisation and time-management skills.
- The ability to work both independently and as part of a team.
- Availability to work rostered evenings, weekends and public holidays.
Applicants must be physically capable of undertaking normal commercial kitchen duties, including standing for extended periods and safely handling ingredients and kitchen supplies.
