Job Description

  • Deliver exceptional food and beverage service by ensuring high standards of guest experience, accurate ordering, billing, and ongoing guest satisfaction.
  • Lead, recruit, train, develop the restaurant team.
  • Ensure strong operational control through stock ordering, inventory management, equipment care and hygiene standards.
  • Maintain compliance with liquor licensing requirements, hotel policies and procedures while supporting team knowledge of menus, dietary needs, allergens, beverages and promotions.
  • Oversee financial and performance outcomes, including stock takes, monthly reporting, KPI tracking, conference and function coordination, and continuous improvement initiatives.

Qualifications
  • A confident and experienced leader with at least 5+ years in a senior leadership role, preferably in five-star hotels or high-volume restaurants. International experience is highly desirable.
  • A strong understanding of food safety requirements.
  • Well-presented with an eye for detail and strong organizational and administrative skills.
  • Calm and solutions-focused, especially during busy or disrupted periods such as cancelled flights – you thrive under pressure and keep the team grounded
  • Someone who leads with manaakitanga – showing genuine care, hospitality, and respect for others in everything you do
  • Knowledgeable in alcohol service, wine varietals, and beverage pairing, with a passion for sharing your knowledge
  • Must hold a Managers Certificate.
