Somtum Thai Limited is seeking an experienced Chef de Partie to join its newly acquired restaurant in Timaru. The company operates established Thai restaurants in Wellington and is expanding its regional presence. The successful candidate will prepare and present authentic Thai dishes, manage an allocated kitchen section, maintain food quality and hygiene standards, support junior staff, and contribute to smooth kitchen operations during busy service periods and peak service seasons.
- Preparing, cooking, and presenting authentic Thai dishes to a consistently high standard;
- Managing the day-to-day operation of an allocated kitchen section during preparation and service;
- Ensuring all dishes are prepared in accordance with approved recipes, portion standards, and presentation requirements;
- Preparing Thai curry pastes, sauces, marinades, soups, stir-fry dishes, rice and noodle dishes, salads, and other menu items;
- Maintaining the authenticity, flavour balance, texture, and presentation of Thai cuisine;
- Assisting the Head Chef with menu preparation, daily specials, and seasonal menu adjustments;
- Ensuring ingredients, herbs, spices, sauces, and other food items are properly prepared, stored, labelled, and rotated;
- Monitoring food quality, freshness, and consistency before dishes are served to customers;
- Supporting junior chefs, kitchen hands, and other kitchen staff with training and guidance;
- Maintaining a clean, organised, and safe working environment at all times;
- Complying with food safety, hygiene, health and safety, and kitchen operating procedures;
- Assisting with stock control, food ordering, and minimising wastage within the kitchen;
- Working efficiently under pressure during busy service periods, and
- Cooperating with front-of-house staff to ensure timely service and a positive dining experience for customers.
Requirements:
Applicants should have:
- A relevant culinary qualification; or
- At least two years of relevant commercial cookery experience.
Other Desirable Skills and Attributes:
- Experience in Thai cuisine;
- Sound knowledge of Thai ingredients, flavours, and cooking techniques;
- Ability to prepare and present dishes consistently to a high standard;
- Strong food safety and hygiene awareness;
- Ability to work efficiently under pressure;
- Good communication and teamwork skills;
- Reliability, professionalism, and flexibility to work rostered hours, including evenings, weekends, and public holidays.
